Israeli Salad Recipe

My Israeli salad recipe is very easy to make. It is fresh, healthy, tastes great and is a natural choice next to hummus falafel and such.

Israeli salad recipe - cutting the vegetables

Ingredients (to enjoy by 4 people)

  • 4 medium sized tomatoes

  • 4 small cucumbers - sometimes called Persian cucumbers

  • 1 bell pepper (green/red/yellow)

  • ½ medium size onion

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 lemon for juice

  • 2 tablespoons olive oil

You can be a bit flexible with the ingredients and replace the dry onion for green onions – or do both. Many people like to add fresh parsley too.

How to prepare the salad:

  1. Chop the vegetables to VERY small pieces and put in a bowl.

  2. Add the salt, pepper, olive oil and the lemon juice and mix well.

  3. Serve to hungry people.

The only real secrets are to use extremely fresh vegetables and to cut those as small as you can.

It should look more or less like this:
